Open FinalCut

Choose File/New Project
Choose File/Save Project As...
name your project XXproject and save it to the XXvideo folder.

Choose Edit/Preferences (Check this setting every session, in case another user has changed it.)
Click on the "Scratch Disks" tab

Click on the "Set..." button and select XXvideo folder for Video Capture, Video Render and Audio Render.

Similarly set the folder for the Waveform Cache, the Thumbnail Cache and the Autosave Vault.
